What could be better than a cake that involves chocolate and marshmallows? A cake that involves chocolate, marshmallows AND Christmas, that’s what!

This amazing Christmas recipe for Festive Elf Slices was created exclusively for Elf for Christmas by foodie blogger and recipe developer extraordinaire Beth Sachs.

Beth creates wonderful and delicious food on her website Jam & Clotted Cream – and as a mum of three littlies, she also knows a thing or two about creating easy recipes for kids!

The only cooking involved in this Christmas recipe is done in the microwave, so smaller ones will need close supervision for that step. The marshmallows and chocolate will get super hot if they’re zapped for too long, so take care!

Festive Elf Slices, Aka White Chocolate & Ginger Rocky Road – by Beth Sachs

Makes 16 squares

Ingredients:

450g white chocolate

50g butter

100g white choc chips

150g dried cranberries

100g fudge pieces

100g glace cherries

100g mini marshmallows

100g ginger biscuits, crushed into pieces

Topping:

2 tbsp dried cranberries

2 tbsp icing sugar

Instructions:

Step 1: Line a 20cm square tin with baking paper.

Step 2: In a large microwaveable bowl melt the white chocolate and butter in 30 second bursts, taking care not to burn the chocolate. Let it cool for a minute.

Step 3: Stir in all of the other ingredients (not the topping ingredients) and press firmly into the tin. Sprinkle over the dried cranberries then place the tin in the fridge overnight to chill (or for at least 4 hours).

Step 4: Cut the rocky road into 16 squares then dust with icing sugar for a snowy effect.
